Commercial refrigeration equipment in restaurants, hotels and right way to use

The necessity of commercial refrigeration system to our life.

Refrigeration was invented hundreds of years ago, and it is commonly used in a lot of areas like food processing and preserving , chemical industry, beverage , biology, automatic measurement, low-temperature drying, construction, oil industry, material, tool, machine design and manufacture, seed treatment, medicine, sport and daily life… 

 Currently, the role of commercial refrigerators can’t be denied. And in reality, commercial refrigerators are commonly used in restaurants and hotels to preserve and keep food always fresh.

 

How to protect commercial refrigerators in restaurant and hotel kitchen from being out of order.

You often hear sound from cold room where a large amount of food is stored. The sound echoes through the space to your mind: “cold room got problem''.

You quickly rush to the area where refrigeration system is installed. When entering into it, you no longer feel quickly overwhelmed cold as usual and all the cool air seem to disappea instead. Your mind is full of great worry. A question is raised in your mind: “what should I do? The repair cost must be very high at weekend”. 

What should we do to prevent this nightmare from plaguing your commercial refrigeration system? If you follow these simple steps, your commercial refrigerator system will operate smoothly year after year.

Rookie cooks are often told this scenario by restaurant owners, chefs when they mention refrigeration system. It could be found that the trouble could happen, and when it does itt would happen at the busiest time like serving times, or weekend. It is the time when it is really hard to have someone fix the problems.

What should we do to prevent this nightmare from plaguing your commercial refrigeration system? If you follow these simple steps, your commercial refrigerator system will operate smoothly year after year.

1. Cleaning dust on condenser of the commercial refrigeration system.

Dust on copper coil restricts performance effectiveness of condenser. This problem don’t make your electric bill spike, it just makes condenser work more than usual. When condenser of refrigerator system works continuously in a long time, it will be overloaded, which makes condenser burn-out. 

2. Wrapping up food containing acid before putting it in the commercial refrigerator.

Almost all people know about the purpose of wrapping food to avoid cross contamination. However, another reason is to prevent acid in fruits from rusting your equipment. For example, some kinds of food like tomato liberate acid, which erodes your copper pipe . Therefore, to avoid this problem , food should be stored in plastic box and lidded. 

 

3. Keeping scupper drain of commercial refrigerator clean. 

There is always a scupper drain on the floor of cold room, which allows all liquid drain . When liquid run out of pipe, to it will be heated and vaporize. If liquid can’t drained out , it will be frozen and affect refrigerator’s performance. As the result, cooling system has to works more than usual and run a high risk of malfunction. 

To prevent  unnecessary refrigerator repair, commercial refrigeration system and scupper drain should be cleaned every day to remove  food scrap and oil.

4. Checking gaskets of refrigerator every week.

A piece of gasket can make difference in your electric bill as well as  the refrigerator operation. Valuable cold air can go out through slits or cracks. When cold air leaks, condenser will have to work continuously than usual  to maintain stable temperature in the refrigerator. Therefore, check and clean gasket every week to replace broken one timely..

 5. Arranging food in a tidy way and  in accordance with capacity
